Seriously how have I missed posting since the end of July? Life has just been crazy busy (I know not a good excuse) and some major writers block.

State of Slim #1

SOS map

In November a friend of mine posted this on Facebook.

“I Plan to coordinate a State of Slim support group on western slope. Still developing but message me if you want to participate. Read the book – State of Slim and let’s get healthy/stay healthy together… it’s what people from Colorado do! First meeting in a week – details to follow. Message me for info.”

And this is how it started!

On November 19, 2013 a group of approximately 6 ladies sat around a table in a coffee shop talking about the book State of Slim. Discussing the book and when and if to start phase one. Can we really do this during the holidays? Some of the ladies were in full force some were like I really need to wait until after the first of the year. After a bit of discussion it was decided that a few of us would start phase one on December 2, 2013.

“Have to share; I wrote this on a document I shared in our first meeting on November 19, 2013. It is so fun to look back now – amazing! I’m certainly looking back in February smiling. For those just starting – look ahead and know that it takes determination each day, moment to make your goals happen. Love State of Slim and what it has done for me.

‘ I want to give special thanks to Deanna Colaizzi and Peggy Wilms for their support of my journey. They’ve both been instrumental in helping me keep it simple while inspiring me that I can do this. I’m ready but admit I’m nervous to start in the middle of the holidays. Regardless I’m going to do this and stick with it so that I build that Mile High Metabolism and can look back in February with a smile knowing I’ve done it.’”

This is a post from the State of Slim FB page
“December 2, 2013 Today’s #StateofSlim Success Story comes from Carol. She started a #StateofSlim group in Grand Junction. Let’s cheer them on!

“First meeting of GJ State of Slim this morning. Group started phase 1 today. I’m so blessed to have amazing Grand Junction folks ready to do this together. We weighed, measured and discussed our respective ‘whys and purpose’. Thank you State of Slim for the research, the book, the support and encouragement!”

On the morning of December 2, 2013 the original support group started with I think a group of 6. Only 3 of the original meeting started on 12/2. To this day 5 of the original still meet every Monday morning to talk about the previous week and the week ahead, learning’s and ideas to be successful. Our group page now has over 35 members and is growing daily. Everyone is on different phases of the plan. 3 of the original 5 are on the 16 week journey, 1 started phase one over after a fun-filled NYE trip to Vegas and the last one is working to find her mental mind-set.

I personally met with a group of 3 after the first of the year. They are on phase 2 and having huge success. When I talked to them on week during week 8 the two ladies had lost a combined total of 21 lbs and the man himself had lost about 20 lbs. Can’t wait to see them in person again!

Carol my friend who brought this to life in Grand Junction has lost 22 pounds in 10 weeks and is well on her way to a rebuilt metabolism and “Fit by 50”! I keep telling her I am going to buy her a hot bikini for her big 50 vacation. She isn’t too keen on my bikini ideas. She just may change her mind before May. When she started her goal was to get to 140 half way through she changed her goal to 130. Monday she was below her original goal with 6 weeks left! AMAZING! I am so proud of her and all the changes she has made. She also had a little turbulence during phase 2 (gallbladder surgery) that didn’t stop her not one bit. Did slow done the amount of exercise but she kept with the healthy eating and rebuilding her metabolism. PS – Her husband is down 28 lbs!

SOS Carol & John

I am sure some of you are wondering what my role is and why I’ve been involved with this group. I am passionate about living a healthy lifestyle. I want to set a good example for my daughter and show her how eating healthy and exercising is important to your everyday life. I want to be a role model for women out there that say they can’t be fit and can’t eat healthy. I don’t want to have high blood pressure or a stroke when I get older and I also don’t want to have Type 2 diabetes. (Family traits)

I’ve learned over these last 10 weeks how important it is to have a mindset to accomplish a goal that has been set, I’ve learned how important it is for me to listen to what my mind says and what I want to achieve. I’ve learned how eating 7x a day is good for me and lastly I LOVE watching and helping others through their journey and pushing them to another level in their life.

This Friday I am lucky enough to be able to visit and tour the Anshutz Wellness Center in Denver. So excited for this opportunity!

Randomness + Photo Blitz!

Last week I had so many random thoughts I decided to track a few and share just for the fun of it! Enjoy the laugh!

Throwback! "Got Milk"

Throwback! “Got Milk”

I have a permanent glitter on the color of my eye. Well, I did have glitter attached to my eyeball but lucky for me the eye doctor removed it with only numbing my eye and q-tip. I am sure you are wondering how a person gets glitter stuck to their eyeball? I am thinking that my hairspray plastered it to my eye!

Fun times!

I walked into the grocery store a disabled Vet is “checking me out” and says to me “I find you look very nice in that there black coat” now that is a first. I’ve never had anyone compliment me on my wool coat.

Amazing Race!

I am sure you have watched and/or heard of the reality show The Amazing Race. I had the privilege to participate with my “mini me” and her 8th grade class in their Amazing Race.If you are looking for a fabulous birthday game or a fun learning project for your kids the Amazing Race is for you!

The teachers dispersed the entire class into teams of 6-8. The teams were made up of different social networks, athletic abilities and IQ’s. The teams had to work together to solve the puzzles and figure out the best route to get to the next location. Before the day of the Amazing Race, the teams participated in different challenges to determine the order of the start.

Mini Me and all her friends!

Mini Me and all her friends!

The clues were very creative and fun.

Our first clue was “Mr. Brennen hasn’t had his coffee yet and you can get some toffee there too.”  All the kids on our team #3 knew the answer right away.

Off we go sprinting to Enstrom’s Candies! When we arrive we had to wait for the other team to finish the activity.

The activity consisted of a blue/silver tarp and a fitness ball. The team was required to turn the tarp over from the blue side to the silver side without touching the pavement while balancing a person on the fitness ball.

AR 3AR 2

All together we had 13 different stations 7.75 miles and a whole lotta fun! I truly enjoyed meeting a group of new kids and watching how each one of the kids excels in different activities. I can’t remember all the clues, because it got hectic and trying to run as fast as we could to find the next station don’t forget I am 30 years older than all the kids I was attempting to keep up with.

#2 – Museum observatory – There were 16 questions that had to be answered about the history of our town and they could use the observatory to find the answers.

#3 – I do remember the clue for this one.

“Catching __________”

“Girl on _____________”

Yep you got it! Fire off to the fire station we go. Here the kids had about 7 science questions that had to be answered along with a physical challenge that the firemen put them thru.

The clue for #4 was a picture of a Ruby, a picture of a canyon and a picture of a bike! The kids thought the ruby was a diamond I think because the picture was black and white. If they would have known it was a ruby they would have ran straight to the Ruby Canyon Bike Shop  rather than running to 2 different bike shops first. When arriving at station #4 it was a break due to waiting on other teams to finish the activity. They had to look at a map and find 10 local bike trails then another timed physical challenge adding clothes to a team mate and adding a blindfold then that person had to ride a bike. Key to this activity was to look at the ENTIRE map!

#5 -City Market Grocery store. When the team arrived in the store the station was found. They were given a gift card and shopping list for this activity. Our team had 6 kids and the shopping list had 6 items so they thought together to divide up the list and each team mate find an item on the list. I think we gained some speed on this because all the kids knew what they were looking for. All the groceries purchased was donated to the soup kitchen. Thank you to all who purchased the gift cards.

#6- I can’t remember the exact clue but it said something about a second hand store being on “Grand” and the name is the same as an Eminem album. The kids said lets run to Grand because we can’t use technology to find the name of the Eminem album. Yep we found the second hand store the Encore Shop. This challenge was defiantly a challenge for this team. Who was REALLY paying attention in Mr. Brennen’s social studies class? A LARGE crossword puzzle on US History! Lucky for our team they could get letters for push-ups. The last word they couldn’t figure out they did 30 push-ups to get it completed.

#7-This was a fun clue to. It said something like the teachers have a “GRAND” time during second elective at this time. This lead the team to 145 Grand they got a 15 minute break, with Gatorade and bananas.

#8 – This clue was a picture of a keyboard and letters were blacked out. It took the team a few solve the word. They decided to just head towards downtown and look for signs to give them ideas. One of the girls said the word City and it clicked “City Hall.” Here we go again sprinting to City Hall. Once we arrived they had to memorize one of the monuments and repeat it.  “We the People……”

#9-I don’t think I ever saw the clue for the next station because the kids already knew where they were going once they read one line of it. Off to the Post Office we sprint, another break here because the teams at the Post Office were still finishing the activity. They had to put a 100 piece puzzle together without talking. I found this to be very interesting. The very quiet kids analyzed the puzzle and pretty much lead the “normal” leaders on this activity.

#10- This clue said something about going here when you turn 16. Yep the DMV. By the time the team arrived to this station they were getting very hungry and tired and the activity was Sudoku. Not this team’s favorite activity. They all struggled with this puzzle and push-ups were not an option with this mom/teacher manning the activity. Finally after about 20 minutes they completed the puzzle and off we go.

#11 – To the dried fruit store for some blindfolded dried fruit. They all loved it. Hahaha

#12 – Off to the R-5 High School where they had to build a tent, write down all the instructions and put it back in the bag. This team had great team work on this activity.

#13 – Finally the last station. The clue said something about getting candy and aspirin at this store. The rain is starting to come down on the team. They are very hungry by this time and they have to run 6 blocks from R-5 to Rite Aid. When getting to Rite Aid they had hop like bunnies in a train. Once done the entire team takes off to the finish line because they are starving! Yes there was a clue for the finish line but who can remember, it said something about find us here and you can eat we will be waiting for you.

I had a fabulous time with all the kids. The Amazing Race proved great teamwork, sportsmanship, learning and physical activities.

The best part of the day was when we got home and my mini me told me “Mom, I am so glad you came to the Amazing Race today you made it a lot of fun and kept my team motivated. Thank you! “

Misfit Thanksgiving

Do you know friends who are divorced with no kids or family on the holidays?

That’s what this Thanksgiving was all about. Supporting our friends who needed us on this holiday. My friend Christina and I decided we would make the feast, give the chef a break from cooking and share with our friends who needed support and love.

We divided and conquered the menu together.

Appetizer of Bacon wrapped Elk tenderloin – Chef

Turkey – Christina

Gravy – Chef (Christina bought jar but the chef didn’t like that idea)

Stuffing (German Style) – Christina

Sweet Potato Pie – Christina

Cranberry Sauce traditional – Christina

Serrano Pepper Cranberry Sauce (Mexican) – Christina

French’s Green Bean Casserole – Me

Mashed Potato’s – Me

Chunky Pecan Bars – Me

Pumpkin Pie – Christina

Apple Pie – I donated blood and they gave me a free pie.

Choke Cherry Merlot (Colorado) Vincent Winery

Cesar Bloody Marys’

Ménage Trios – California Red

Ménage Trios – Pinot Noir

Cupcake – Pinot Noir

Be Healthy!

I wanted to burn some calories on Thanksgiving morning so I hit Gold’s gym at 5:00 am with a friend and did combat, back home for a 2 hour nap and then hit my gym for Kick It at 9:00 total of 1,065 calories burned!

If you don’t have a gym open I bet you could find a Turkey Trot 5K to burn some calories. I chose Kick It instead this year because it’s a lot warmer in the gym and I burn more calories than running a 5K.

Let the festivities begin!

Christina and I started prepping for the big meal the day before. This is probably my favorite part of Thanksgiving. Hanging in the kitchen drinking wine, laughing and catching up with my friend.

Do you peel your celery? Christina does!

We set the table, made stuffing, cut the potatoes, made Serrano cranberry sauce, drank more wine and invited guests over to join us!

Three of us girls in the kitchen laughing, giggling and telling girl stories, only to get quiet when Christina’s misfit walks in. Let the party begin!

The Thanksgiving appetizer just so happened to get eaten the night before Thanksgiving. Very delicious, can’t beat fresh elk tenderloin wrapped in bacon “its a taste of heaven.”  We also had artichoke dip and homemade meatballs and sausage.

Three bottles of the Thanksgiving dinner wine were consumed before the big dinner. I only tasted two of the three because I had to get up at 4:15 in the morning for Combat!

Ménage à Trois

Pinot Noir

Fancy a little splendor in the glass? Turn down the lights, turn up the Barry White and uncork the Ménage à Trois Pinot Noir. When it comes to affairs of the palate, we’ve always felt that three was much more fun than one, so we played matchmaker and brought together grapes from three distinctive California wine growing regions known for producing exquisite Pinot Noir. Clarksburg grapes add bright flavors and a lovely perfume, North Coast grapes add silkiness, and Central Coast fruit rounds out the blend with beautiful complexity. Enhanced with French and American oak, our Pinot Noir’s is sure to have you waxing poetic. How do I love thee? Let me count the ways…

This was an ok Pinot not one of my favorites. I probably wouldn’t buy it again. If you like oak you will like this Pinot.

Ménage à Trois

California Red

Even if red wine is not your speed, give our Ménage à Trois Red a try. This wine exposes the fresh, ripe, jam-like fruit that is the calling card of California wine. Ménage à Trois Red brings together three strange bedfellows.

On top we’ve got Zinfandel, a saucy tease that brings blackberry and raspberry jam to the relationship. Merlot, with its generous mouth feel and red fruits, fits perfectly in the middle. The rich flavors and firm tannins of Cabernet Sauvignon make it the ideal.

I love this wine! It’s a great inexpensive blend.

I bought the Cupcake Pinot Noir because I love the Cupcake Red Velvet Cake wine.

“Our Pinot Noir has the aroma of cherries that carries through the palate with a touch of red currants and a hint of spice. It’s reminiscent of a cherry cupcake with currant coulis.”

What a fun night with friends! We laughed and laughed and laughed! Definitely a night to remember!

What do you do on the eve of Thanksgiving?

Thanksgiving day!

On my way home from the gym I called to see if the bird had made it to the oven after the party the night before. Christina has only cooked a turkey once before. She told me she could only find the neck in the bird and had it cooking on the stove for the gravy. I thought it was strange that there were no giblets in a fresh turkey. Oh well no biggie the neck will make great gravy.

We arrived and started the dinner with Bloody Mary’s. I like mine Cesar style.

Cesar Bloody Mary

Kettle One Vodka

Celery seed

Pepperoncini juice

Clamato juice

Pepperoncini pepper

The oven timer went off and the bird was ready to come out! Looks magnificent!

When we started cutting into the turkey guess what we found? Yep! The giblets!

Time to Mangia!

Wine with dinner was a Choke Cherry Merlot from a friend of ours vineyard.

Everything was excellent! My favorite sides were the sweet potato pie and the green bean casserole. What is your favorite side?

Chunky Pecan Bars

After a few hours of football we had dessert and then I was stuffed like the turkey!

Some Old and Some New!

Yesterday just happed to be my birthday! I had a fabulous day for many reasons!

If I were to sum it up in one word that word would be FRIENDS!

I truly had an eye opening experience yesterday.

I received over 80 birthday wishes from friends and family members. Ranging from Facebook posts, text messages, e-mails and even visits to my office.

The very first message I read was from a close friend of mine from Jr. High School and High School. Her post reminded me of a milestone in my life and what fun she and I had.

It was 25 years ago, our last day of High School.

The last message of the day was from a new friend of mine she sent me emotional text message.

I will never forget all the beautiful words that were shared with me on May 22, 2012!

Thank you to all of my FABULOUS friends!

The Chef and my Mini me spoiled me rotten with  a fabulous dinner.

Fresh Grilled Swordfish, Grilled Steak and a summer time salad.

Served with a VERY Chilled Mosacto (my new summer wine for a hot day)

Spoil your friends on their Birthdays!

They will notice!
